I love a good dessert. I have a massive sweet tooth, so treats are needed to get me through life. I thought I'd share this little recipe because it's not too complicated and it's only 4 Weight Watchers Points! If you're not fussed about the calories, there can be a few substitutions to make them a little more decadent
What you'll need:
4 Ramekins
300ml Skimmed Milk (replace with whole milk or cream if you're feeling naughty!)
1 Teaspoon of Vanilla Extract
2 Teaspoons of Coffee granules or powder (I used Douwe Egberts Caramel Coffee for extra flavour)
2 Eggs
40g Caster Sugar
Whipping Cream
Light Muscovado Sugar
First of all you'll want to preheat your oven to 160 degrees (140 if fan assisted). Pop your milk, vanilla extract and coffee in a pot on the hob, mix well and bring to the boil. Once boiled remove from the heat. In a separate bowl whisk your eggs and caster sugar until light and fluffy. Pour in your coffee mixure and whisk well.
In a baking dish/tin sit your ramekins in and fill with warm water until about halfway up, then sift your mixture into the ramekins. This removes any foam and makes them nice and smooth. Bake in the oven until they have set - this should take around 25-30 minutes but just give your tray a little shake and if they're set you're good to go.

Let them cool and then chill them in the fridge for a couple of hours. I made mine after dinner so I just left them over night. While they're chillin in the fridge, take 3 tablespoons of whipping cream and whip it up until formed. Spoon a little over each dessert and then crumble a teaspoon of light muscovado sugar evenly between them. Then they're ready to serve! They're really good, like a coffee tinged Creme Brûlée.
